Tjolöholm castle is my recommendation too. It's so beautiful and it's located just by the sea. Have a look at these pictures: smallpigart.se/blog/wedding/minst-150-ar/ I have not read the text and I don't know what church they used for the ceremony but the wedding reception was held at Tjolöholm castle. You find some good links on that page as well.

If you are looking for a genuine Swedish environment I have to recommend something in Dalarna. 
Tällberg is a small place on the brink of Siljan.
You can find a lot of very nice hotels there.
